Mixed Vegetable Coconut Curry

Ingredients

2lbs Frozen Mixed Vegetables

200 gms Coconut Masala

Salt to taste

 

Instructions

 

Simmer the mixed vegetables in Coconut Masala till vegetables are tender. Adjust Salt to taste.

Garnish with chopped coriander.Serve hot with Roti/Rice/Naan.

Soy Nuggets Aloo Curry (Potatoes)

250 gms Potatoes (diced)


100 gms soy nuggets

200 gms  Curry Masala


1/2 cup water

Salt to taste


Instructions

Simmer the potatoes and nuggets in Curry Masala. Add salt to taste. Garnish with chopped coriander.Serve hot with Roti/Rice/Naan.

Achari Bhindi (Okra)

Ingredients

2lbs Okra (diced)

1 onion diced

200 gms Achari Masala


1 tbsp Oil

Salt to taste


 

Instructions

Stir fry diced onion till partially cooked and add diced okra in 1 tbsp oil. Continue to stir-fry till cooked . Add Achari Masala and salt to taste . Simmer for a few mins .

Garnish with chopped coriander.Serve hot with Roti/Rice/Naan.

Falafel Curry

Ingredients

 

6 frozen Falafel

Add diced Vegetables (optional)

200 gms Curry Masala

1/2cup Vegetable Stock/ water

Salt to taste

Instructions

Simmer the frozen Falafel in the Sauce +Stock till defrosted. Add Salt to taste


 Enjoy with Naan, Roti or rice.

Mutter Aloo (Potatoes and Peas Curry)

Ingredients

250 gms Potatoes (diced)


200 gms Peas (Frozen/Fresh)

200 gms  Curry Masala


1/2 cup water

Salt to taste


 

Instructions

Simmer the potatoes and peas in 1 bottle of Curry Masala. Garnish with chopped coriander.Serve hot with Roti/Rice/Naan.

Achari Lentils

Ingredients

 

1 cup dry lentils

200 gms  Achari Masala

Salt to taste

Instructions

Boil the lentils with enough water, Achari Masala and salt.


Garnish with chopped coriander and Sliced Onions. Enjoy with Naan, Roti or rice.

BlackEye Beans

Ingredients

1 lb Rongi/Blackeye Beans

1 cup water

200 gms Curry Masala(Mild/Spicy)

Salt to taste

 

Instructions

Pressure cook the beans and salt for 20 min. Add the curry masala and simmer for 4 mins. Garnish with chopped coriander. Serve hot with Roti/Rice/Naan.

Achari Gobi

Ingredients

I cauliflower head (diced)

200 gms Achari Masala


1/4 cup water

Salt to taste


 

Instructions

Simmer the Gobi in Achari Masala. Garnish with chopped coriander.Serve hot with Roti/Rice/Naan.

Tadka Dal

Ingredients

1/2 Cup Chana Dal

1/2 Cup Urad Dal (Split)

200 gms Curry Masala(Mild / Spicy)

Salt to taste

 

Instructions

Pressure cook the dal and salt for 15 min. Add the curry masala and simmer for 2-3 mins. Garnish with chopped coriander and a dash of fresh cream. Serve hot with Roti/Rice/Naan.

Dum Aloo using 'Curry Masala'

Ingredients

 

2 lb PeeWee Potatoes

½ Cup water

200 gms Curry Masala(Mild/Spicy)

Salt to taste

 

Instructions

Microwave the peewee potatoes in the bake mode .

Add them to the "Curry Masala" . Add 1/2 cup water and Salt.

Simmer for 5 mins 
Garnish with chopped coriander. Enjoy with Naan or rice.
